In the dog days of winter, after you’ve eaten the best of your brassicas, you’re invariably left with odds and sods: a handful of stragglers, the kales, chards or chicories which you haven’t picked yet, but which aren’t quite enough to make a harvest.
It seems a shame to let them go to waste: so mix ‘em up instead. Recipes which call for generic ‘greens’ are invaluable since you can just chuck in whatever you’ve got. This one is my favourite as it’s true comfort food: a delicious blend of hearty beans and fresh, nourishing greens straight from the garden. If you want to make a meal of it, add some bacon too, and some crusty bread: it’ll heat you from the inside out for the rest of the day.
